If you've been here from the start, you'll remember Hidden Bagel's sister shop, The Scoop, serving bagels, sandwiches, and liege waffles alongside its ice cream. As the sweet side grew, The Scoop had to narrow their offerings. When the space next door opened on the South Hill in 2021, right as the pandemic had everyone baking sourdough at home, owner Jennifer Davis saw the perfect opportunity to bring savory options back and fill a gap in Spokane's bagel scene.

Before opening Hidden Bagel, Jen went straight to the source, training in New Jersey with Beth George in what the NY Times coined "The Cradle of Global Bagel Baking." Before opening Hidden Bagel, Jen went straight to the source, training in New Jersey with Beth George in what the NY Times coined "The Cradle of Global Bagel Baking." That education is baked into every batch. Each bagel moves through a three-day rhythm of mixing, rolling, and baking, with a long fermentation that builds a deeper flavor and a chewier bite. The result, made with unbromated flour, is a bagel that's as easy on the stomach as it is hard to put down.

Jen would never tout herself as community-minded, but her neighborhood bagel and ice cream shops do the talking for her. Whether it's free Thursday night dinners during a struggling economy or working regularly with hundreds of local nonprofits and small business, these are the kind of things that happen quietly at Hidden Bagel and The Scoop, where kids who grew up on scoops of ice cream now work behind the counter. She makes you feel like part of the family the moment you walk in.

Hidden Bagel joined its sister shop and opened its Kendall Yards location in November 2022, one of the easiest and smartest decisions the team has ever made. The spot puts Hidden Bagel closer to our friends in the Monroe and Garland districts, downtown Spokane, and our many loyal Gonzaga University bagel besties! You can also now find bagels and schmear at other amazing local businesses, like White Dog Coffee, Thomas Hammer, The Park Bench Cafe, Legal Addiction, and 1902.
Jennifer Davis is the owner of Hidden Bagel and The Scoop, two Spokane businesses built on the same idea: real food made with care, served by people who actually care about the neighborhood they're in. We start with simple ingredients and sprinkle in the fun, and are honored to have so many long-time supporters who have been here from the start.
What started as a pandemic-era need has grown into two bagel shops that Spokane locals now consider part of their weekly routine. Jen's approach has never changed: use quality ingredients, do things the slow way when it's worth it, and treat every customer like a neighbor (because many of them are!).
Whether you've been coming in since day one or you're trying your first bagel this week, Jen's hope is the same: that Hidden Bagel feels like it belongs to the community as much as it does to her.
